Just out of curiosity, what are the little stars on the side of your profile? Is it bad that I just have one? Do you get brownie points for posts? I'm so lost, help me!

It means nothing here. Some sites use them to designate authority, but we don't. Stars are dependant on the number of posts. So, post often and you'll get a higher "rank" (so long as it isn't spam, in which case you lose all credibility).
Basically, it is nothing of anyone's concern, as we are all equals here. This, plus the fact that a lot of the active users are guests, means that even if we did put stock in rank, the most respected people would be considered unworthy of higher-ranked people's time (this segues into elitism, which if I started to get into that, you'd spend a good hour straight reading this. Thus, we'll stop there).

Actually Earl's 5 stars indicates a moderator, while ordinary gold stars increase with more posts. But ignore that, except as a general guide of how long someone's been here. Ignore that too, because we all know each other, just about.

Finally, can I have a list of my moderating functions? I can't delete posts unless they're from users, and with most of us being guests, that's fairly useless (it doesn't bother me, just so long as I can close idiot threads like "Disorderly Eating" while you're away).

You should have an "admin functions" bar at the bottom of a thread, just above the "Quick Reply" box. And that should let you "remove topic".
If you don't, well, I've hunted around in the forum settings but haven't found a way to enable it for you. I'll have another look.

I don't. It doesn't bother me, as I've never really used admin functions before (I'm the sort of human who'll generally allow a discussion to go its own way rather than delete it. Sure, when people PM me about it, I'll shut it down, but unless there's something extremely offensive, I'll let it be).

Well, I'm the admin, and I say DELETE ALL SPAM immediately. There isn't really any anymore, but for a long time before I was admin, there were hundreds of adverts for cigarettes, flowers, and Russian brides, as well as heaps of pyramid posts.
Anything like that has a license to die immediately. Also anything that starts off like "eating disorderly", as long as nobody has made any meaningful replies.
All QB questions are to be moved to the QB section.
If a regular makes an offensive post, that is a different matter, and intentions and circumstances must be taken into account.
That's about all, for now.

Here's what I see on my screen:
At the top, I have "home", "help", "search", "members", "calendar", "profile", "logout"
Inside posts I have "link to post", "back to top", "IP: Logged" for all posts, and "quote" for a post not made by me. For a post made by me, I have "quote", "delete", "modify".
At the bottom of the page (above Quick Reply), I have "search this thread", "add bookmark", "reply", "send topic to friend", "print".
Since I'm using Quick Reply now, I can't see the rest of my functions (I doubt I'd have more via the regular reply process).
I will follow your wishes and delete posts like that and anything I'd consider offensive (I'll delete anything offensive to any one, for any reason (against my normally laissez-faire attitude on posting, however it'll be following your directive, making it acceptable to follow)).
